There is a hot new fast-casual restaurant near Spaghetti Junction that is cooking up some incredible Laotian cuisine called the Snack Boxe Bistro.  Just to brush everyone up on their geography, Laos is a southeast Asian country that borders Vietnam and Thailand and Cambodia.  The cuisine is closest to Thai cuisine and The Snack Boxe serves Lao street food—so the sort of dishes you would buy on the city street from stalls and carts.

A signature Laotian dish is sticky rice, an extremely dense and rich rice that comes in a bag that you actually eat with your fingers like a snack.  You can dip it some of their sauces like a sweet roasted pepper sauce or a chilli lime fish sauce and it’s absolutely delicious.

Other dishes I tried were the chicken larb (pronounced LOB), an incredibly flavorful and fragrant red curry pork noodle soup and the Nam Khao, a pork dish served on a crispy coconut rice which was one of the most extraordinary Asian dishes I have ever eaten.  It was savory, crunchy and bursting with flavor.  This is a menu that you will want to explore—things like shrimp ceviche, lemongrass ribs and sticky rice omelet cakes are just a few of the little gems on owner Vahn Sengaphone’s clever and well-executed menu.

But probably the best thing about Snack Boxe Bistro is that it’s very user-friendly for Westerners.  It’s simple, clean, very modern feeling and the menu is in English.  And not a single dish tops $10 so for the quality of food it’s an absolute steal.  I would say this is an excellent way to ease into the Buford Highway scene (even though it’s not on Buford Highway).
